Update docs with sensor configuration instructions

Now that #328 is implemented, the docs also need to be updated (specifically [working_with_expedition_yaml.md](https://github.com/Parcels-code/virtualship/blob/main/docs/user-guide/tutorials/working_with_expedition_yaml.md)) providing instructions on how to configure the instruments with different (subsets of) sensors.
