feat: add BI Dashboard documentation (#83)

* feat: add BI Dashboard documentation with sub-pages

- Split bi-dashboard.md into 4 sub-pages: On-Premise Setup, First Time Login, Remove Token, Complete Uninstall
- Add _category_.json for BI Dashboard sidebar (position 5)
- Organize images into subfolders per page
- Update sidebar positions: Stoke Take Mobile App (3), Banks (4), BI Dashboard (5)

+### Step 1 – Stop The Service
+
+1. Control Panel > Administrative Tools > Select **Services** > Right click > **Run as administrator**
