[TIP] extend howtos and docs on how payment vendor side added tip is handled

When a tip is added during the payment transaction in the payment vendor app the returned pay item amount is increased by the tip amount (requested amount + tip --> response amount).

This must be documented and correctly handled in the HOWTOs
