Figure out how to do activity based graphs to slice by by date range to avoid HUGE datasets

**Describe the bug**
On dashboard, several of the graphs use ALL the activities which won't work at scale so we need to get a limited number of activities within date range and if user moves around more we will have to refetch a different rage
