ITP Onboarding Updates

Draft PR created to generate a deploy preview

This PR will reorganise the Onboarding module of ITP to bring more content into the first three weeks of the course. It will also fill gaps created in later modules by moving things forward.

This issue links to details of planned changes.

Progress:

• High-level restructure of Onboarding prep
• Write notes for new prep content
• Redraft old content to align with new structure
• Move backlog items $^1$
• Reorganise workshops
• Fill gaps in later modules $^2$
• Consistency checks

1 - Backlog changes will require a change in how we store tasks - working on it!
2 - Currently only Structuring & Testing Data, but this may change
