chore(release): restore 0.6.1 version line

Summary

• correct the mistaken 6.1.1 release/version line back to 0.6.1 across packages
• update Askable package dependency ranges in workspace packages, examples, and scaffold defaults
• update docs/version metadata to advertise v0.6.1 instead of v6.1.1

Testing

• Installed dependencies from a clean worktree
• Verified example Askable dependency ranges
• Built all workspaces
• Ran the full workspace test suite
• Built the VitePress docs site
