Add Ktor MicrometerMetrics plugin with PrometheusMeterRegistry exposing two custom gauges (shoppimo_websocket_connections_total and shoppimo_shopping_lists_total) alongside JVM/HTTP metrics at /api/metrics. Remove unused MetricsResponse and MemoryInfo data classes.
